A Taste of Chile

 Five Course Wine Dinner

 Course 1:

Shrimp and Tomato Salad

Plump shrimp tails tossed in a brandy, lime and cilantro sour cream sauce, with a touch of chili.  Served over poached onion and fresh tomato.

De Martino “347 Vineyards” Sauvignon Blanc

Brilliant light straw in color, notes of fresh peaches and grapefruit on the nose intermingling with subtle hints of herb. The herbaceousness follows through to the palate, but it is the wonderful fruity, citrus finish that lingers in the memory. It is well balanced and fresh with excellent acidity.

Course 2:

Fresh Chilean Seabass

Fresh and succulent, we bake this wonderful fish with fresh herbs and serve it atop veggie infused couscous with a medallion of tarragon butter.

Haras Chardonnay

Bright, fresh and rich in flavors of citrus, pineapple and tropical fruits. The long finish prolongs the pleasure with a pronounced mineral presence enhanced by a delicate hint of oak.

Course 3:

Hickory Smoked Pork

Dry rubbed and smoked to perfection by chef Sean. This we slice and serve over Yukon Gold mashed potatoes with a sweet and spicy Calvados Apple Sauce.

Calina Reserva Merlot

This wine shows red berries, plums and black and red cherries with cedar on the nose. The mid-palate is plump, plush and juicy with a dash of vanilla from the oak barrels. The long finish is bolstered by mild tannins and balanced acidity.

Course 4:

Braised Ribeye of Beef

Whole Ribeye of beef braised until rare and served with a mushroom medley with porcini, shitake and white button mushrooms in an  Au Jus, all served over purple potatoes and slow cooked greens.

Haras Carmenere

Dark violet in color with ruby reflections. Begins with notes of mineral, fresh herbs, tobacco and flowers, followed by flavors of figs. The palate is lush and juicy, with concentrated tannins and fresh fruit flavors.

Course 5:

Chocolate Ganache topped Pecan Pie

Classic mini pecan pie topped with a decadent chocolate ganache and a fresh strawberry.

DE MARTINO “347 vineyards” Cabernet Sauvignon

A brilliant deep shade of red with a violet hue, this has an intense nose maintaining balance and perfect harmony between spicy notes, fresh red fruits and vanilla. In the mouth it is fresh, full-bodied and spicy with great integration between vanilla and notes of chocolate.

 $49.95 per person
