chicken marinated in a mix of peppers and spice; baked and served with sweet
plantains.
Beaujolais Nouveau – Georges Debeuf
Beaujolais Nouveau is a purple-pink wine that
is particularly lightweight, even by the standards of Beaujolais. The
method of production means that there is very little tannin, and the wine
can be dominated by fruity, ester flavors of bananas and pear drops.

This rich and thoroughly scrumptious slow
cooked casserole, a Caribbean favorite, is made carefully over a few hours
and dashed with plenty of red wine, fresh herbs and vegetables. Served with
Yukon Gold mashed potatoes and green peas.
Buena Vista Syrah
Elegance and finesse are balanced exquisitely in this
Syrah
with aromas of blueberry, and raspberry, nutmeg, dark roasted
coffee and white pepper. Hints of toastiness exhibiting flavors of
boysenberry and chocolate and a lingering plumy finish with nice acidity.
